Ingredients for Borlotti Beans Recipe

  • 1 kilogram fresh borlotti beans
  • ½ tea glass of olive oil
  • 1 medium-sized onion
  • 2 cloves of garlic
  • 1 large potato
  • 2 medium-sized carrots
  • 2 medium-sized tomatoes
  • 2 cups hot water
  • 1 teaspoon tomato paste
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt

For serving:

  • ¼ bunch of parsley
  • Juice of 1 freshly squeezed lemon (optional)

 

  1. Shell and wash 1 kilogram of borlotti beans thoroughly, then add enough water to cover them.
  2. Boil over medium heat for about 10 minutes.
  3. Heat ½ tea glass of olive oil in a deep pot.
  4. Add 1 grated onion and 2 crushed garlic cloves, and sauté until lightly colored.
  5. Add 1 diced potato and 2 diced carrots, then add 1 teaspoon of tomato paste for color and continue to sauté.
  6. Add the boiled borlotti beans to the pot, then add 2 grated tomatoes, 1 teaspoon of salt, and 1 teaspoon of granulated sugar, and let it simmer on low heat.
  7. Remove the pot from the heat and let the borlotti beans rest with the lid on until they reach room temperature.
  8. Finally, transfer the borlotti beans to a serving dish and serve warm or cold with finely chopped parsley. Enjoy your meal!
