Ingredients for Olive Oil Celery Dish Recipe
For Preparation:
Juice of 1 lemon
1 tablespoon flour
3 medium-sized celery
1 large bowl of cold water
For Olive Oil Celery:
1/2 tea glass of olive oil
2 large onions
2 carrots
2 teaspoons salt
1 teaspoon granulated sugar
Juice of 1 lemon
2 cups hot water
A handful of celery leaves
For Serving:
1/2 tea glass of olive oil
A handful of dill leaves
1 lemon (sliced)
How to Make Olive Oil Celery Dish Recipe?
1) Fill a deep bowl with cold water, add lemon juice and flour, and mix.
2) Peel the celery, cut it into thick wedges, and place them in the prepared water to soak.
3) Dice the onions into small cubes and cut the carrots into large triangles after peeling one layer.
4) In a wide, thick-bottomed pot, cook the onions in olive oil with salt over medium heat until they soften without browning.
5) Once the onions are soft, add the carrots, lemon juice, orange juice, and sugar, and bring to a boil.
6) Arrange the soaked celery in the pot so they do not overlap and are in contact with the bottom of the pot. Add hot water until it just covers the celery.
7) Cover the celery with dampened parchment paper, close the pot lid, and cook over very low heat.
8) Check the celery occasionally, and stop cooking when a knife tip can easily penetrate the thickest part. Finally, add fresh celery leaves and let it rest until it reaches room temperature.
9) Once cooled, drizzle olive oil over the entire dish, and serve with dill leaves and lemon slices. Enjoy your meal.
